Fruition Restaurant in Denver, CO
Since opening in Denver in 2007, Fruition has been repeatedly hailed as one of the best restaurants in America. Chef Alex Seidel and Maitre D' Paul Artardi created Fruition with a vision of serving sophisticated comfort food in a restaurant that offers the ambience of home. Natural and simple wood chairs and tables in wine and butter tones make the decor play second fiddle to the cuisine.
The menu is seasonal, but includes a wide variety of fish, red meat and pork and no meat options. For example Potato-Wrapped Oysters Rockefeller made with parmesan-leek emulsion, bacon lardons and baby spinach along with an Heirloom Tomato Salad made with roasted eggplant hummus, marinated sheep’s milk feta and a toasted pine nut emulsion were included as starters.
Entrees might include Pan Roasted New Zealand Sea Bass served with crispy polenta, shaved baby artichoke & cerignola olive salad, heirloom tomato & roasted pepper vinaigrette, Maple Leaf Farms Duck Breast made with duck confit & potato hash, poached asparagus, preserved Meyer lemon hollandaise, duck crackling salad or a Grilled Bavette Steak served with sweet Vidalia onion ring, mushroom emulsion, caramelized potato gnocchi & foraged mushroom salad.
