Linger
is located in the Highlands neighborhood, and more specifically, in the former Olinger Mortuary
parking garage. It's no surprise that the cuisine not only has to rise above
a seemingly endless parade of new and ever more tempting fine dining options
in
Denver, but it also has to rise above Justin Cucci's smash hit Root Down
that opened in late 2008 and is commonly referred to as "my favorite
restaurant in Denver." Based on the fact that he has apparently in all
actuality accomplished topping Root Down, we can succinctly say that "this
guy clearly has it all goin' on."
But enough about Mr. Cucci, you're here to read up on Linger. Linger is
about two words; Street Food. Linger is a way to intimately connect with communities different than
your own. All around the world Street Food is vibrant, social, humble
and diverse. The Linger menu embraces diversity: of food,
people, ethnicities, cultures and life. The menu includes small plates,
tapas, meant
to be shared, that are inspired by ingredients and dishes, found in Europe,
Asia, the Middle East, Africa, the Americas, South Asia and Eurasia. From
Mongolian BBQ Duck Bun and Sesame BBQ Tacos to the Chicken B’stilla made
with crispy pastry, almonds, apricots, golden raisins, Saigon cinnamon,
harissa, preserved lemon yogurt and an heirloom greens salad, this is a menu
with a splendid multiplicity that has to be tasted (over and over) to be
fully appreciated.
For dessert we like the Italian Coffee & Donuts with crispy zeppole,
powdered sugar, espresso-chocolate mousse and lemon espuma, or another option
is to save room for a walk around the corner to
Little Man Ice Cream.
If the menu and service aren't spectacular enough, the breathtaking views of
the Denver Skyline will amaze you. In addition, this is a restaurant with a
soul, approximately 75% of Linger was built and finished with reclaimed, reused
and recycled materials. As with Root Down, Mr. Cucci uses local, organic and sustainable products
whenever possible. Filtered vizion water is used for all
cooking, drinking, ice and sodas. They recycle and compost whenever possible
- this includes glass, cardboard, fryer oil and everything in between.
