The
minds that brought you Hillcrest’s Cafe W and the chef who brought small
plates dining to San Diego’s historic Gaslamp Quarter Via Confidential
Restaurant and Loft are excited to announce their newest project “Bite”.
Bite is located at 1417 University avenue
in Hillcrest just east of Richmond avenue
and promises to bring a new level of dining excitement to the area. Chef
Chris Walsh has a long history in Hillcrest and San
Diego and hopes his newest creation will
tantalize the taste buds in a whole new way. Long known for his unique
Asian and Latin American influenced tapas Walsh is going back to his
roots by creating a menu influenced largely by Northern Italian and
French Bistro fare designed to be paired with a large selection of
Italian, French and California Wines. The bar will also feature up to
eight house infused sakes for those who prefer a “cocktail” over wine.

to offer dinners Sake
Cocktails
as an alternate to Wine and Beer. One of the most exciting beverage
enticements will be the daily champagne happy hour offering several
selections of bubbles by the glass at very affordable prices. Bite will
feature sidewalk patio dining, a contemporary lounge and a
community/singles table that can accommodate up to 12 guests in addition
to a dining room that incorporates both tables close to the action as
well as romantic hideaways. The design, which chef Walsh (who is also
doing all the design) describes as Mid Century Modern Industrial. Think
graphic design, clean lines and a color palate of Vanilla, Saffron,
Dijon Mustard, Extra Virgin Olive oil and Bittersweet Chocolate.
Chef
Chris K. Walsh was born in Northridge California,
the son of a commercial fisherman and a former Restaurateur, He was a
very precocious youngster and once he became interested in a topic he
learned everything he could about it whether is was gardening,
astronomy, lapidary or cooking. As a youth he dreamed of being a
veterinarian but his love for cooking over took that goal in high
school. Chef Walsh’s latest project is called Bite – Modern California
Bistro and Wine Bar. Opened in May of 2007, Bite brings Walsh’s love for
small plates and his culinary roots in French and Italian cuisine “Full
Circle”. Bite’s offerings are a bit more
rustic in approach, allowing the quality and freshness of the
ingredients to shine thru. Featuring cuisine from the birthplace of wine
production, he offers an eclectic selection of wines by the glass and
bottle at affordable prices.
